Never Fail Beef Brisket

Posted by Catherine Ann Bruno, PhD on

Forget the people outside at the grill doing their "secret thing", sweating over it for hours, standing there, checking and rechecking it, basting, turning, smoking, over and over.

With my never fail recipe you put it in your kitchen oven and walk away.  So here it is...

1 Container Salado Creek Foods® Brisket Rub

 Sauce:

4 T Apple Cider vinegar

4 T Salado Creek Foods® Soy sauce

1-4oz Bottle Salado Creek Foods® Liquid Smoke-Mesquite (Hickory if you Prefer)

4 T Salado Creek Foods® Steak Sauce

4 T Salado Creek Foods® Worcestershire Sauce

1 10-12lb Beef Brisket Trimmed of hard fat, keep the soft

2 Huge Yellow Onion-peeled, washed and halved

Pre-heat oven to 250°F.

Carve the large end to make it close to the same thickness all over.

Place the sliced onions in the bottom of a Large Old Fashioned Rectangular Metal Roaster Pan with Handles.  We won't be using the lid, just the bottom.

Place the brisket pieces in the roaster lean side up.  You will be using all the rub.  Rub the tops and side of all pieces rub.  Flip all pieces so the fatty side is up now and continue to use the rest of the rub.

Mix all the liquid ingredients together and pour the sauce over and around the brisket.

Tightly seal the roaster with a sheet of heavy duty aluminum foil.  Do not go over the handles, crimp the foil under the rim.

Bake in the oven for 8 hours.  No peeking…leave it alone…it will be fine...just walk away!!!!!

Remove from oven and allow brisket to rest 30 minutes on the countertop.

DO NOT UNCOVER, DO NOT PEEK!!!

After at least 30 minutes of resting covered, uncover, slice brisket thinly sliced against the grain.

Serve with juices in an oil separator along with onions.

This is great with Potato Salad, British Baked Potatoes, Baked Beans and Yorkshire Pudding.  See our other recipes for these too.

If you are going to divide up the brisket and freeze it for the future...put the cooled juice along with the onions in a blender and liquefy.  Save this mixture in small containers.  When you thaw the brisket pour the juices over it before heating and it will taste like you just pulled it from the oven.
